Changes!

Hi everyone! It’s been almost an entire year since I posted in Chef By Invitation! While I loved the site and what I did with it, a lot has changed for me in the last year. I introduce you to my new blog Pancake Saturday! You can still find all CBI posts but the site will take a bit of a different turn. I hope to see you there!

Currently.

Hi everyone! I can’t believe it’s been a month since I’ve posted! That went by quickly. Life has been consisting of a lot of sleeping and eating. Most of the eating is being done out of the house, I’m afraid. When 5 pm rolls around I’m so tired that I’m not really in the mood to cook.

I have been circling back to a lot of my favorite recipes and being wowed again and again by them. Everything is yummy. I’ve been eating a lot of these black bean ‘meatballs’ but making them taste like falafels instead. I could eat those every single day of my life.

I also made a really good fish and chips dinner last week per Pierre’s request. I used catfish and I coated it in panko breadcrumbs and spices. It was the best fish and chips I’ve ever made and I’m kicking myself for not having taken photos of it. I’ll do it again soon, I’m sure.

But I do have a confession. It’s been almost one year since I decided to become a pescitarian. It was pretty easy for me to make this switch after a life of eating a lot of meats. I wasn’t even craving meats. But once I was about 5 or 6 weeks along the cravings hit and they hit hard, for chicken mostly. I’ve only cooked meat once (a pork tenderloin) in my own house but when we go out to dinner or get take out, I’ll occasionally order chicken. I don’t really feel guilty or ashamed to admit this because I feel like if I’m craving it then my body needs it. I want this pregnancy to be as healthy as possible and I don’t want to deprive myself of anything. I have noticed a change in my digestion since eating meats again. It’s slower and I feel heavier after a meal (but that could be the babies ;)). I guess it’s not really a terrible thing but I loved that I didn’t feel that way after a vegetarian meal.

Now that I am in the second trimester of this pregnancy I’ve noticed that I don’t feel like I need meat anymore and I look forward to meat-free meals more than I did in the first trimester. I looked at veggies and wanted to cry, I had zero desire to eat them. Glad that’s over!
